The grenache is hand harvested and meticulously harvested during the cool night hours of Mitzpe Ramon. When it arrives at the winery, it undergoes a short cold maceration on the skins to obtain a light salmon color, spontaneous fermentation with wild yeasts in neutral French oak barrels and then aging in them for a period of six months.
