Pea purée

An alternative to classic guacamole that's especially tasty when peas are in season. Purée from fresh peas is especially tender and fragrant. It's incredibly versatile and works well as a simple spread on bread, served with fish and chips, or as a side dish for lamb and other meat dishes.

Ingredients for 4 portions

  • Green peas700 gr
  • Red onion1 piece
  • Creamy cheese (Ricotta or other)150 gr
  • Milk150 ml
  • Salt, pepper and spices1 by taste

Red onion — 1 pieceAdd water to a large pot, lightly salt, and bring to a boil. Peel and cut an onion into 5-6 pieces.

Green peas — 700 grAdd the peas and onion to the boiling water. Bring to a boil, turn down the heat and wait for the peas to soften. It usually takes 5-20 minutes (young peas cook faster).

Creamy cheese (ricotta or other) — 150 gr, milk — 100 mlPut the cooked peas and onions in a deep bowl, add the cheese and a little milk, and mash well. Or you can use a blender on this step instead.

Milk — 50 ml, salt, pepper and spices — 1 pieceAdd spices to taste and a little more milk until the purée is creamy.
